This was a special Easter for Steve and me, it was our 10th one together. I wanted to make it extra special so I made my Garlic And Fennel Bone-In Pork Loin. Served Family-style with my Garlic Roasted Potatoes With Sautéed Peppers and Lemon Pepper Asparagus.

Yields: 4 servings (@ 2 chops per person)
Equipment: Roasting pan with a rack, food processor, plastic meat cutting board, Chef’s knife, whisk, large glass measuring cup

Ingredients:
1 5-pound bone-in pork loin, bones French cut
6 garlic cloves, roughly chopped
1/3 cup of rosemary leaves, chopped
2 tablespoons of lemon zest (2 lemons)
2 tablespoons fennel seeds
2 tablespoons of Creamy Caesar dressing
1 heaping tablespoon of Dijon mustard
2 tablespoons of olive oil
1 tablespoon of Kosher salt
1 teaspoon of freshly ground black pepper

Ingredients For Pan Gravy:
1/4 stick of unsalted butter
1/2 cup of all-purpose flour
3 1/2 cups of unsalted chicken broth
1/4 cup (4 tablespoons) of the pan drippings
2 tablespoons of Italian flat-leaf parsley, finely chopped

Directions:
Preheat oven to 400-degrees F.
Note: Pork loin needs to be at room temperature. Allow the meat to sit out for 30 minutes before cooking.

Place the pork, fat side up, in a roasting pan just large enough to hold it comfortably. In a food processor fitted with the metal blade, process the garlic, rosemary, and fennel seeds until roughly chopped. Add the Caesar dressing, olive oil, Kosher salt, and fresh ground black pepper until it becomes a smooth paste. Transfer the mixture to a small mixing bowl, add the lemon zest, mix to combine.

Rub the mixture all over the top of the pork and roast for 1 to 1 hour and 15 minutes, or until the internal temperature is between 140 and 145-degrees F. Remove from the oven, transfer to a meat-safe cutting board and cover tightly with foil. Allow the pork to rest for 30 minutes. Slice between the bones and serve immediately.

While the pork is resting start the pan gravy.
Carefully pour the hot liquid from the roasting pan through a mesh sieve into a measuring cup. This will allow you to see how many pans dripping liquid you have.

Place the roasting pan on top of the stove on medium-high heat. Add the butter and allow to melt. Once the butter’s melted, add the flour, whisk to combine until a smooth paste (*roux) forms and is blond in color. Still whisking slowly add the pan drippings and chicken broth, bring to a simmer. Continue to whisk, the *roux will cause the gravy to thicken. Add the parsley, stir to combine. Transfer the gravy to a large glass measuring cup.

*Roux is a 1:2 ratio of fat to all-purpose flour.

Meatloaf is a favorite in my house. I’m always trying to reintroduce new flavors into my meatloaf. Whether I’m trying different types of ground meat or adding different ingredients, meatloaf is comfort food. This is my Meatloaf With Sun-Dried Tomatoes.

Meatloaf Gravy

I want to talk about my gravy for this dish. Sometimes I like to make a gravy that’s more in the style of an Au Jus. What I mean is, it’s more on the brothier side than a thicker style gravy. I’ll get into more detail later in the post.

I’m making this meatloaf with ground chicken. It’s leaner and I can play around with some new flavors. Let’s get started.

Yields: 6-8 Servings
Equipment: 12-inch sautépan, 1  rimmed baking sheet pan

Ingredients:
2 tablespoons good olive oil
1 sweet onion, diced
1 red and yellow bell pepper, diced
1 Poblano pepper diced, (substitute green bell pepper)
1/2 cup chopped sun-dried tomatoes
2 cloves grated garlic
1 tablespoon dried oregano
2 large eggs
1/4 cup Ricotta cheese
1/2 cup half and half
5 dashes Worcestershire sauce
2 tablespoons Ketchup
2 tablespoons Kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons finely chopped fresh Italian flat-leaf parsley
1 3/4 cups seasoned Italian breadcrumbs

2-pounds of ground chicken (substitute ground turkey)

Gravy:
2 cups unsalted chicken broth
2 cups unsalted beef broth
5 sprigs of fresh thyme
Salt and pepper to taste

Side Dish: 2 15-ounce bags frozen Petite Green Peas

Directions:
Preheat the oven to 350-degrees F.
Heat the olive oil in a large sauté pan over medium heat. Add the onions and diced peppers, cook for 5-7 minutes, stirring occasionally, until the vegetables are soft but not browned. Set aside to cool.

Place all the ingredients, from the list above, into a large mixing bowl adding the breadcrumbs last. Mix together until you get the consistency of wet sand. To that add the cooled sautéed onions and peppers and the chopped sun-dried tomatoes. Mix to combine.

Finally, add the meat. With clean hands, gently toss the mixture together, making sure it’s combined but not compacted.

Place a piece of parchment paper on a rimmed baking sheet pan. Transfer the meat mixture over to the lined sheet pan. Pat the meat into a flat rectangle and then press the sides in until the meat forms a cylinder down the middle of the pan.  The will ensure there will be no air pockets. Bake for 40-50 minutes, until the internal temperature, in the middle, reads 155-160-degrees F.

Remove from the oven and allow to rest for 10 minutes before slicing.

Directions For Gravy:
To a 3-quart saucepot add 2 cups unsalted chicken broth, 2 cups unsalted beef broth, and 5 sprigs of fresh thyme. Over medium heat, bring the liquid up to a simmer. Salt and pepper to taste.

In a small bowl, add 4 tablespoons of cornstarch to 4 tablespoons of cold water. Whisk together until smooth paste forms. Whisk the *slurry (cornstarch/water mixture) into the sauce pot with the broth (chicken/beef) until the liquid comes back up to a bubble, 2-3 minutes. Fish out the thyme sprigs.

*Slurry:  Mix 1 tablespoon of cornstarch with 1 tablespoon of cold water. Whisk until smooth paste forms. Add the slurry into the hot, simmering liquid you want to thicken. 2 tablespoons per cup will give you a thicker, more gravy-like consistency.

Can you think of anything better than a Homestyle Baked Mac & Cheese? I’ll bet your answer is no, and I would agree.

Meatloaf Withh Sundried Tomatoes (2)

Yields: 6-8 servings
Prep Time: 15 minutes
Cook Time: 30-35 minutes
Total Time: 50 minutes
Equipment: 9 x 13 baking dish

Ingredients:
1 box or pound of Cavatappi (or elbow macaroni)
3 1/2 cups whole milk
1/2 cup heavy cream
1 stick unsalted butter plus 6 tablespoons
1/2 cup all-purpose flour
12-ounces Gruyère  cheese, grated (4 cups)
8-ounces white Cheddar, grated (2 cups)
4-ounces Mascarpone, room temperature
1/2 cup grated Parmesan cheese
1/2 teaspoon freshly grated nutmeg
1 tablespoon freshly cracked black pepper
1 teaspoon Kosher salt
1 1/2 cups Panko breadcrumbs
1 tablespoon sweet Paprika (substitute smoked paprika)
1/4 cup dried parsley flakes, plus extra for garnish
Finely shredded Parmesan cheese for garnish on top (optional)

Directions:
Preheat the oven to 375-degrees F.
Butter a 9 x 13 baking dish.
Bring a large pot of salted water to a boil, add the macaroni, and cook according to the instructions of the box, 6-8 minutes, drain really well.

At the same time, heat the milk and heavy cream in a small saucepan, but do not boil. Melt 8 tablespoons (1-stick) in a large (6-quart) pot and add the flour. Cook over low heat for 2 minutes while whisking, until it’s light blond in color. Whisk in the hot milk and cook for another 1-2 minutes. Add the pepper, Kosher salt, and grated nutmeg, continue whisking until sauce thickens and becomes smooth.

Off the heat, switch to a wooden spoon, stir in the Mascarpone first, then the Gruyére and white Cheddar. Add the cooked macaroni, and half the parsley, stir well. Pour into a 9 x 13 buttered baking dish.

Topping:
Melt 2 tablespoons of butter in a large sauté pan. Add the Panko breadcrumbs, Paprika remaining parsley and toss to evenly coat. Sprinkle the breadcrumbs all over the top of the casserole. *Dot the top with the remaining butter. Bake for 30-35 minutes, or until sauce is bubbly and macaroni is browned on top. Optional, sprinkle finely shredded Parmesan cheese and parsley over the top while hot.

Serve hot.

*Dot: To scatter bits of butter over food.

Sweet Chili Fire Chicken With Red Bell Peppers And Pineapple

How about making “take out” at home? I’m saying “why not”! Sometimes grabbing fast food once and a while is sometimes a necessity. Making delicious Chinese “take-out”dishes at home is even better. The reason, because you know exactly what’s going into the dish.. A few simple ingredients with a heavy bottom pot can make this dish a reality.

 

 

Yields: 6-8 servings
Prep Time: 30 minutes
Cook Time: 35 minutes
Equipment: heavy bottom pot and a spider

Ingredients:
1-1/2 tablespoons of olive oil
2 red bell peppers, julienned
2-1/2 cups of drained pineapple chuncks, fresh or canned
2 bottles of Thai sweet chili sauce
3 cloves of minced garlic
1 cup of thinly sliced snow peas ( thinly sliced on bias)
3 tablespoons of finely minced chives
Kosher salt and black pepper to taste

For The Chicken:
2 pounds of 1 inch cubed skinless-boneless chicken breasts
2 tablespoons of Kosher salt
1 teapoon of freshly cracked black pepper
2 cups of vegetable oil
2 cups of all- purpose flour
4 cups of corn starch
6 large eggs, beaten

Directions:
Prep all the veggies first, having them on stand-by.  Using a meat cutting board, dice up all the chicken, tossing them into a bowl along with the salt and pepper.  Using tongs, make sure the salt and pepper is distributed evenly on the chicken. Grab the largest bowl you have or a large Tupperware container, making it easier to coat the diced chicken pieces. Next, add the flour and toss so that all the pieces are coated.

Heat the vegetable oil in a large heavy bottom pot, like a Dutch oven. Over med- high heat, and  using a candy thermometer, have the oil temperature reach 360 degrees F. The oil will take a little while to reach the perfect temperature for frying. Move on to sauteing the veggies.

Add olive oil to saute pan. On med-high heat, add the veggies and minced garlic in. Sprinkle salt and pepper to taste. Saute until just soft, about 3-5 minutes. Add the pineapple chunks last just to warm them through. Turn the heat off.

Next, transfer the sauteed veggies and pineapple, from the saute pan, to a large skillet, one that has deep sides. This will be necessary in accommodating all the ingredients. Set the skillet with the sauteed veggies to the back of the stove before starting the frying process.

Going back to the dredging process for the chicken. In one large bowl have the beaten eggs and in another bowl have the corn starch. In small batches, dip the diced chicken into the eggs and then into the corn starch. Place the finished coated chicken pieces onto a large sheet pan.

Check the temperature of the oil. Once the oil is ready, add the battered chicken in small batches, about 5-6  at a time, into the pot.Continue dipping the chicken into the egg mixture and then into the corn starch. Cook around 2 minutes per side or until golden and crispy. Remove from the oil, then transfer them onto a sheet pan lined with paper towel. Repeat this process until all the chicken pieces are cooked.

Bring back the skillet and turn on medium heat. Add in all the crispy golden pieces of chicken to the sauteed veggie with pineapple. Pour in the bottles of the Thai sweet chili sauce and toss all the ingredients through. Let simmer for another 5-7 minutes, stirring occasionally. Once everything is hot, then turn the heat off and sprinkle on the minced chives. Serve immediately.
