Watermelon And Feta Salad With A Lemon Vinaigrette

Salty, sweet, it’s just so delicious and so refreshing. I just take some arugula and cube up a seedless watermelon into large chucks. Then I dice up some really good feta cheese, and that’s it for the salad. For the dressing, well, really simple.


One of my favorite gadgets is the salad spinner. Great for after washing your greens then drying them really well so the dressing adheres to the leaves.

In a small bowl I juice 1 lemon, 1 teaspoon of Agave nectar, and a sprinkle of Kosher salt and black pepper. I start to whisk that together as I slowly drizzle in some extra virgin olive oil, around 1/3 of a cup. That’s all there is to the dressing. I spoon the dressing over the watermelon and feta salad. So simple right? Try this salad the next time your looking to try something a little different and I’m sure you’ll love it. How about on a skewer?
