Wild Blackberry Cobbler

As you’ll know, my husband and I now live on a mountain in Tennessee. As we’re making changes to the inside and outside of our home, life has been super busy. We’ve discovered our backyard is covered with wild blackberries https://www.bbcgoodfood.com/howto/guide/health-benefits-blackberries. We’re also seeing grape vines. We aren’t quite sure what kind they are because they’re not ripe yet, but I’ll keep you posted. Steve’s been picking the ripe blackberries every chance he gets, and you know what that means: Wild Blackberry Cobbler.

I love my recipe for Blackberry Cobbler; it always turns out perfectly.

This recipe requires self-rising flour. I know many of you may not keep this type of flour on hand, but not to worry, neither do I. To make self-rising flour, whisk together 1 cup of all-purpose flour, add 1 1/2 teaspoons of baking powder, and a pinch (1/4 teaspoon) of fine Kosher salt. If the recipe requires more than 1 cup of self-rising flour, you may need to add 1/2 teaspoon of baking powder.

The link below is for either my Wild Blackberry Cobbler or Blackberry Cobbler; both are delicious and easy to make. I like serving my cobbler with a sprinkling of powdered sugar or warm with a scoop of good vanilla ice cream.
