Prep Time: 5 minutes
Cook Time: 35 to 40 minutes

Yields: 2 servings
Equipment: 2 rimmed baking sheet pans
4 bone-in skin-on chicken breasts
1/3 cup of olive oil
1 tablespoon of Kosher salt
1 teaspoon of freshly ground black pepper
lemon slices (optional)

Preheat oven to 350-degrees F.
Place the 4 chicken breasts onto 2 rimmed baking sheet pans. Rub olive oil over the top of each one. Sprinkle Kosher salt and fresh ground black pepper over each chicken breast. Bake for 35 to 40 minutes or until the internal temperature is 165-degrees F.
Once the chicken comes out of the oven, cover with foil and let rest for 5 minutes. You’ll never have dry chicken again. There you have it, my Pefect Roasted Chicken.
