Prep Time: 5 minute
Cook Time: 5 minutes
Total Time: 10 minutes
Yields: 2 servings
Equipment: 1 (12-inch) sauté pan, chef’s knife

Ingredients:
2 (5-ounce) packages of organic fresh baby spinach
2 tablespoons of olive oil
3 garlic cloves, sliced
1 teaspoon of red pepper flakes
1 tablespoon Kosher salt
1 teaspoon fresh ground black pepper

Directions:
Start by slicing 3 garlic cloves. Next, add oil to a cold sauté pan. Add the sliced garlic and crushed red pepper flakes to the pan. On medium heat, bring the oil up to temperature and sauté the garlic for a minute until fragrant. Add the spinach leaves, to the pan, in batches. As soon as all the leaves have wilted down, season with the Kosher salt and fresh ground black pepper. Toss through one more time until all the leaves are coated then turn off the heat. Transfer the to a large serving bowl. This dish is so flavorful, you just may change your mind on how you feel about spinach. Serve hot.
