My Blackberry Bourbon Barbecue Chicken Over Red Quinoa

As soon as I took my first bite of this dish, I had to post this picture as soon as I could. Don’t worry I’ll be posting this recipe soon. Having some experience with #barbecue, I wanted to try something a little more special. Its so easy and basically, done in one pot, which I love.

This dish has a complexity of flavors, which I like to describe as a roller coaster for you taste buds. Having the chicken braise slowly in this delicious blackberry barbecue sauce gives a pink hue to the chicken.  Once the sauce has reduced, well, that just gives a the chicken a deeper color.  Cooking with chicken, bone- in and skin- on, in a Dutch oven produces really tender chicken. This sweet and savory sauce, I don’t know if words alone can do this dish justice.
