The Ultimate Leftover Meatloaf Sandwich

You know whenever you make a meatloaf, it’s the next day that I look forward to. The ultimate meatloaf sandwich. That’s right, how to make this sandwich one that you will never forget. So now I go over to my pantry.

My sites are set on those roasted Piquillo peppers. Now to the frig, Oh baby. some mixed greens, and Fontina cheese, definitely a must. Finally a red onion, heirloom tomatoes, and some Ciabatta bread. Let’s build this sandwich. First, nice thick slices of the cold meatloaf. Lay on top two slices of that Fontina cheese and place them in the oven just to warm through the meatloaf and melt that cheese so it gets nice and bubbly brown.

I’m not looking for a super hot sandwich, because I prefer a cold meatloaf sandwich. I just want to have that cheese melted beautifully over the meat. So I set the oven on broil with the oven door cracked and don’t let them out of your site. You do not want burnt cheese, that so not be a good thing. Moving forward take these slices of meatloaf out and let’s start building these bad boys!

Lay on those beautiful greens on top of the meat with that melted cheese..

Slice the tomatoes and pile them on.

Now for the peppers and onion.

A sprinkling of Kosher salt and pepper. Cut that sandwich in half, put your favorite movie, and “tastethelove” that went into making that sandwich.
