Perfect Asparagus

This has to be my favorite vegetable, let me count the ways. Roasted, blanched, wrapped in bacon, or made into a soup, however they’re prepared, I just love them. My favorite has to be just simply blanched in to some salted boiling water for a couple of minutes.Image

After a couple of minutes I shock them in ice water to set the color.


At this point I pat them completely dry and then saute them in just a little olive oil, and lemon pepper for just about a minute or two. Finally I sprinkle with some kosher salt, or if you want to be fancy maybe some Fleur de sel. If you love asparagus try making them like this. Really simple yet so delicious.Image
