Mac & Cheese With Italian Sausage

I start with 4 tablespoons of unsalted butter and 4 tablespoons of four to make roux. After the flour has cooked off, slowly add your heated milk to the roux until it thickens.You will know it’s thick enough when it coats the back of a wooden spoon and you can draw a line down the back of the spoon and it stays there. It should take around 1 quart of heated milk. Then I grated 1 teaspoon of nutmeg into the thicken cream sauce with 1 teaspoon of kosher salt and 1/2 a teaspoon of black pepper. Now it’s time to add the grated cheeses. 2 cups of grated white cheddar, 1 cup of grated Gruyere, and 1/2 a cup of grated Parmigiano- Reggiano. I reserve a little of the Parm back for the top. I previously roasted some Italian sausage off that I cut on the bias to add to the cheese sauce.Totally optional I added some chopped blanched asparagus also. I felt better about eating the dish with a vegetable in the mix. Now you want to add your cooked pasta to the cheese sauce. I tend to under cook the pasta by a few minutes because it will finish cooking in the backing dish. For the topping I melt 1/2 a stick of unsalted butter in a saute pan and add Panko bread crumbs to the butter until nice and brown . I also add some freshly chopped Italian parsley and some Paprika for color. I then top the mac & cheese with the crumb mixture evenly over the top, and add little tabs of butter over the crumb mixture so it browns nicely. In a preheated oven at 350 degrees I bake the mac & cheese for about 45 minutes or until the dish is golden and bubbly.
