Caponata Chili

It’s one of the coldest days down here in Orlando, Florida and I’m craving chili. A one pot meal packed with the traditional flavors of Mexico. Everyone pretty much has their own version of chili, whether its all vegetarian, or with meat. One thing that can be agreed upon is that no matter what it’s fantastic. All those wonderful spices, Yummy. I however wanted to do something just a little different from the norm. I grew up having a dish called Caponata. This dish was filled with eggplant, peppers, artichokes, zucchini, and potatoes, and tomatoes. What if i could infuse the two ideas. So here’s what I’m thinking. all Mediterranean veggies that would go into a Caponata, white Cannellini beans, hot and sweet Italian sausage, but using all Italian herbs and spices. Maybe serving this dish by ladling the Caponata chili over some Orzo pasta and sprinkling some freshly shredded Mozzarella cheese over the top. I guess I better get started I have my work cut out for me.
