Apple wood Smoked Turkey Sausage And Asparagus Frittata

I start out by prepping all the ingredients that are going into my Frittata. I blanched my asparagus and cut them into 1 1/2 inch pieces, diced my red bell pepper, finely chopped the chives, and grated a cup and a half of Parmasean cheese. Preheat oven to 350 degrees. I grilled off my turkey sausages on my indoor grill pan, but you could easily grill it outside too. Then I cut them on the bias so they would look nice. I sauted the red bell pepper with a pinch of kosher salt and cracked black pepper ( in a non stick saute pan, that I have sprayed with a non stick cooking spray, to insure that it will come out of the pan easily) until it was slightly soft and then added my sliced smoked turkey sausage. On low heat I let that cook for a minute while I whisked 10 large eggs (at room temperature) with 1 cup of half and half. I then added some kosher salt, pepper, the chopped asparagus, chives, and Parmasean cheese to the beaten eggs. I stirred all of that together well then poured this mixture into the pan with the peppers and sausage. On med heat and with a spatula I slowly moved the eggs around as they started to scramble bringing the eggs on the bottom to the top so they would cook evenly. As the egg mixture starts to pull away from the sides of the pan, remove from the heat, sprinkle a little more of the Parmasean cheese on the top and place into the oven for around 25-30 minutes or until you see that the entire top has set. Let cool for about 15 minutes, then take your spatula run it ImageImageImageImageImageImageImageImageImage around the edges to make sure the Frittata has loosened from the sides and then it should slide right out. This dish is great served with a simple arugula salad with a lemon vinaigrette. You can put anything you like inside your Frittata. Try this dish I know you will love it as much as I do.
