Parsley Potatoes

In a heavy bottom pot with a tight fitting lid I put 2 tablespoons of butter, 1 tablespoon of olive oil, 2 minced cloves of garlic, and half a onions finely diced.  Then I put my potatoes in, add salt and  pepper, put the lid on and let it go. The potatoes just steam with the butter, onions and garlic. After 15 minutes I give them a gentle stir and let them go for another 10-15 minutes or until fork tender.  That’s it they are done.  Just chop up some Italian flat leaf parsley a pinch of salt to taste.
