You could probably put almost anything you like as the filling in the egg roll.  Sweet fillings would work as well.  Anyway I had some left over meatballs and turkey chili that had black beans, white corn and Poblano peppers.  After being refrigerated, the leftovers the were easier to use as fillings. For the meat balls, I cut them into quarters and added mozzarella cheese.  The chili, I added some Colby jack cheese.  On a board I set out on egg roll sheet put the filling at the bottom third of the sheet and started rolling then tucked in each of the sides, rolled almost the rest of the way and brushed a little egg wash( 1 egg beaten with 1 tablespoon of water) on the top end, so the pasta sheet will stay closed. In a big dutch oven filled about half way with canola oil, set  350 degrees I started deep frying. I would do couple at a time for about 3 minutes or so, until golden brown. Pull them out and set on paper towel to catch any drain off any extra oil.  These egg rolls make a great snack anytime.
